Dairy-free Caesar dressing
- 1/4 cup plain hummus
- 1 tsp spicy mustard
- 2 tbsp fresh lemon juice (could go less if you don’t like lemon)
- 2 tsp capers (finely minced/smashed, plus 3 tsp brining juice)
- 1 tbsp fresh minced garlic
- 1 healthy pinch each sea salt + pepper
- 2 tbsp olive oil
- makes enough for 2 salads
